persimmon & jalapeño jam

one of my favorite things to do is imagine the way something should taste...and then experiment with recipes until i produce the item...our persimmon and jalapeño jam is a perfect example....i always loved the concept of hot pepper jelly...but every version i tasted was off...just too sweet, or too hot, or too "something". i decided to create a hot pepper jam that tasted like the ingredients should taste...i used fresh persimmons and meyer lemons from our farmhouse garden, organic jalapeños, organic sugar...and real fruit pectin...my husband peter was one of my tasters...he took one bite and said..."you should serve this on biscuits with fried chicken, mashed potatoes and coleslaw"!... the perfect reaction...try it with your own fried chicken dinner recipes, or on a sandwich...or as a glaze for baked chicken, ham or fish...or a million other options...this stuff is really, really good...but be careful...it is addicting!...packaged in our iconic, reusable 1/2 pint mason jars...of course with the magazine page toppers...stay green, eat organic when you can...and "live a green life of style"...
